Finding Joy in Almond Flour Muffins


Can you imagine a delicious muffin with only 10 grams of carbohydrates? That’s the kind of joy I’m finding with almond flour muffins!

Because I have LADA Diabetes, I follow a diet that’s low in carbohydrates (carbs). I don’t like eating much more than 40 grams of carbohydrates at one time, simply because it makes managing my blood glucose harder. Eating more carbohydrates means that I need to also give myself a larger insulin injection… Which I find kind of scary. Yes, I use an awesome insulin pump, but dosing insulin is always a bit unpredictable, so I like to limit my carbohydrates to keep my mealtime insulin needs on the low side. Dr. Bernstein writes about this in “The Laws of Small Numbers.” He does a great job explaining the benefits of a low carb diet for managing diabetes. He recommends a lower carb diet than what I follow. I still eat the occasionally bagel — but usually only half a bagel at a time.

I was excited to see a bag of almond flour at Costco because it has a lower carbohydrate count than regular flour. So, I bought this bag of almond flour, but then I didn’t do anything with it for awhile, because I wasn’t sure if I would like almond flour bread.

Find Almond Flour Online

If you don’t have a Costco near you, your next best bet may be finding it online. Amazon sells Black Diamond Almond Flour which gets excellent reviews. I find that specialty items are often a better deal online than at my local store.

For the Love of Muffins

I found this blueberry almond flour muffin recipe which got glowing reviews, and decided to give it a try. The only issue was that I didn’t have any blueberries left, so I substituted cranberries. I made a couple of other changes and created my very own Lemon Cranberry Almond Flour Muffins. The complete recipe is below.

I really found joy in mixing the ingredients and baking these lovely muffins.

The prep and baking time weren’t too long either. Warm, out of the oven, I got delicious low-carb muffins!

There’s no store near me that sells Almond Flour Muffins… and even if they did, I doubt they would be as delicious as these!

Recipe: Cranberry Lemon Almond Flour Muffins (Low Carb)

This recipe makes 12 muffins.

Ingredients

  • 2 cups finely ground almond flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup melted butter
  • 1/4 cup maple syrup
  • 3 large eggs
  • 1 tablespoon lemon zest (zest from 1 lemon)
  • 1 teaspoon vanilla extract
  • 1 cup frozen cranberries

Directions

Preheat the oven to 350 degrees.

Spray muffin pan with non-stick cooking spray.

Mix almond flour, baking soda, and salt in a large mixing bowl.

In another bowl, combine the butter, maple syrup, eggs, lemon zest, and vanilla.

Mix the liquid ingredients into the dry ingredients.

Rinse the frozen cranberries and remove any stems. Fold the cranberries into the batter.

Spoon the batter into the muffin cups.

Bake in the preheated oven until the tops spring back when lightly pressed, about 24-26 minutes.

Approximately 10 grams of carbohydrates per muffin.

Muffin Carb Count: Almond Flour versus Regular Flour

A typical blueberry muffin is 40-70 grams of carbohydrates. This almond flour muffin is a mere fraction of that, at 10 grams, and it tastes delicious! The texture is a bit different but our family loves these muffins, and it makes a difference when managing blood sugar. There’s also fiber in the almond flour, which helps with blood sugar stability and gut health. All in all, this is a winner!
