Life with LADA Diabetes can be a balancing act—especially when it comes to meals. Managing blood sugar levels requires a diet that’s low in carbohydrates but high in flavor and convenience. And let’s be real; we don’t always have the time to whip up a home-cooked meal from scratch. That’s why having prepared low-carb foods stashed in the freezer can be a lifesaver.

A Tasty Solution: Realgood’s Creamy Poblano Chicken Enchiladas

It’s a frozen dinner option we stumbled upon at Costco, and we’re thrilled we did! These enchiladas boast a high protein content while staying incredibly low in carbs, making it a perfect addition to our LADA-friendly household.

Convenience and Flavor Hand-in-Hand

One of the significant advantages of having pre-made low-carb dinners like this in your freezer is the sheer convenience. However, it’s essential to note that the cooking time instructions for microwaving were slightly off. While the box suggested heating the tray on HIGH for 3 1/2 minutes, it took a couple more minutes in our microwave to cook it thoroughly.

That said, the little additional time was well worth the wait. The enchiladas were creamy, the chicken was tender, and the poblano sauce had the perfect kick. Both of us genuinely enjoyed the meal, which speaks volumes about its quality.
