For lunch today, I enjoyed a low carb meal from Costco: Green Chili Shredded Chicken & Riced Cauliflower Bowl by Don Lee Farms.
It was delicious! The chicken bowl had plenty of tasty dark chicken meat, and it was tender and spiced just right. It also contained cauliflower, which has a lot of health benefits, although overall it was more chicken than veggies.
I’m not a fan of very spicy foods. In my opinion, this had just the right amount of heat. The green chili peppers, garlic, spices and lime juice, made it very tasty, but I’d describe it as “mild.”
Because I have diabetes, one of the major reasons I bought this meal is that it’s very low carb. The net carb count (after subtracting fiber from carbohydrates) was only 11 grams. Eating low carbs makes treating my diabetes easier, and, fortunately, the keto diet has been trending lately, so finding foods low in carbohydrates and high in protein has been getting easier and easier!
This chicken bowl is like a TV dinner. I microwaved it and it came out fine. I’d recommend this for a quick, low carb meal.
